Poor Man’s Lobster


Serves: 4
Total Calories: 200

Ingredients

1 pound haddock, skinned and boned
1/2 cup butter, melted
1 stack-pack round buttery cracker, crushed

Directions:

Cut haddock into bite-size pieces. Dip in melted butter, then dredge in cracker crumbs. Place in a lightly greased 1 1/2-quart shallow baking dish. Cover. Bake at 350° for 10 minutes. Uncover. Bake 10 minutes longer.

Note: Do not substitute any other fish for haddock.

Editor's Extra: Haddock probably tastes a bit like lobster, but I have to confess I did substitute other kinds of fish, and granted, the tastes were all different . . . but all good.
