Oven-Fried Fish Fillets

Ingredients

3/4 pound fish fillet
1/4 cup frozen orange juice concentrate
salt and lemon pepper to taste
1/4 cup dry bread crumbs
1 tablespoon melted butter
parsley and lemon slices

Directions:

If the fillets are large, cut them into small portions. Preheat the oven to 500°. Combine the orange juice concentrate with salt and lemon pepper. Dip the fish in it, then roll in bread crumbs, coating well.

Place the fish in a single layer in a greased baking dish. Drizzle on melted butter. Bake for 10 minutes. Reduce the heat to 350° and continue cooking for 5 minutes, or until the fish flakes when pierced with a fork. Serve on a heated platter, garnished with parsley and lemon slices.
