Nevie’s Stove-Top Scampi

3 tablespoons olive oil
3 tablespoons butter
1 clove garlic, finely minced
1 1/2 pounds jumbo shrimp, peeled, deveined and butterflied
3 tablespoons lemon juice
seasoned salt, to taste
white pepper, to taste
3 tablespoons vermouth


Heat olive oil in large skillet over medium-high heat; add butter and turn to medium heat. Add garlic and sauté for 2 minutes, carefully coating pan. Place shrimp into pan; lightly brown on one side and turn. After turning, sprinkle with lemon juice, seasoned salt, and pepper. Turn heat up to medium high for quick browning. Sprinkle with vermouth evenly. Swirl shrimp and seasonings together. Turn off heat, cover, and set off to side. Serve immediately. Yields 6 appetizer or 2 main-course servings.

Editor's Extra: Want a great go-with? Split a loaf of French bread or hoagie bun down the middle, brush with olive oil and sprinkle with Parmesan cheese. Broil 2–3 minutes. Open a bag of pre-mixed salad and you’ve got a super supper.
