Lazy Man’s Fried Chicken

Ingredients

2 pounds frying chicken, cut up
1/4 cup shortening
1/4 cup butter
1/2 cup flour
1 teaspoon salt
1 teaspoon paprika
1/4 teaspoon pepper

Directions:

Preheat oven to 350°. Wash and dry chicken. In oven, melt shortening and butter in 9x13x2-inch pan. Mix flour, salt, paprika and pepper. Coat chicken thoroughly with flour mixture. Place chicken, skin-side-down, in melted shortening. Bake, uncovered, for 30 minutes. Turn chicken and cook 30 minutes more.

Editor's Extra: This “fried chicken” doesn’t need constant attention, and my favorite part is that there are no messy spatters to clean up.
