Cajun Fried Chicken

Ingredients

1/3 teaspoon red pepper
1 tablespoon yellow mustard
3 ounces Tabasco
4 tablespoons water
1 (2 to 3-pound) fryer chicken, cut up
salt to taste
1 cup self-rising flour

Directions:

Combine red pepper, yellow mustard, Tabasco, and water to make a sauce. Salt chicken pieces. Dip chicken in sauce and roll in flour. Fry in hot oil at 400° for about 10 minutes on each side until golden brown. Drain on paper towels.
