Lazy Day Chicken

2 pounds chicken breasts
1/3 cup flour
1 package dry onion soup mix
2 sliced carrots
2 stalks sliced celery
1 can mushrooms, drained (optional)
1/2 cup sherry
1 can cream of chicken soup

Oil large baking dish. Dredge chicken in flour and place in dish. Sprinkle onion soup over top. Place sliced vegetables on soup. Combine sherry and cream soup. Spread over chicken and vegetables. Dot with paprika. Cover with foil and bake at 350° for at least 1 hour 15 minutes.

Even Easier: This only takes 13 minutes to assemble with boneless chicken breasts and canned or baby carrots, and is ready in one hour. The sherry gives it a unique flavor. The sauce is so good, you’ll want to serve it over rice. Put some whole potatoes or sweet potatoes in the oven to bake at the same time. Come back in an hour for a super meal.

Fun Fact: The average American ate about 81 pounds of chicken in 2000, compared to 28 pounds per person in 1960. At 81 pounds, chicken enjoys the highest per-capita consumption of any of the major meats, with beef in second place at 69 pounds per person on a retail weight basis. Pork is in third place with 52 pounds.
