Grilled Salmon with Sweet Onion Relish

4 salmon steaks
2 large sweet onions (Walla Walla or Vidalia), chopped
1/4 cup olive oil
1 tablespoon sugar
1 bay leaf
1 sprig fresh thyme
1 tablespoon balsamic vinegar


Grill salmon steaks 12–15 minutes, depending on thickness. Sauté onions in olive oil until transparent. Add sugar and herbs. Cook until mixture is caramelized. Add vinegar to taste. Serve sauce over grilled salmon steaks.

Even Easier: Grill steaks on a 2-sided contact grill (George Foreman-type) for 3–5 minutes, depending on thickness.
