Ingredients

12 doves, split down the back
1/4 cup burgundy wine
5 ounces currant jelly
1/4 cup barbecue sauce
1/4 cup orange juice
1 teaspoon orange rind, finely grated
1 stick butter
1 teaspoon arrowroot (cornstarch)
1 watercress and orange slices for garnish

Directions:

In broiler pan, place doves, breasts down. In pan over medium heat, combine well next 6 ingredients; add arrowroot. Pour over birds; broil on top rack in oven for 10 minutes or until birds are brown; baste several times. Turn over birds; brush well with sauce; broil 10 minutes more or until crisp and brown; baste often. Remove to hot platter; spoon sauce over doves; garnish.
