Touch of Italy Chicken

Ingredients

4 chicken breasts, skinned and boned
Italian seasoning, salt and pepper to taste
1/2 (10-ounce) package fresh spinach, cooked and drained
provolone cheese
4 teaspoons plus 1/2 cup (1 stick) butter, divided
2 eggs
2 1/2 cups bread crumbs
1 teaspoon Italian seasoning
1 teaspoon paprika

Directions:

Wash chicken breasts; place between wax paper and pound thin. Sprinkle breasts with Italian seasoning, salt and pepper. Place 1/4 of spinach down the center of each breast. Top with a finger of provolone cheese. Top with one teaspoon butter. Fold chicken like an envelope, encasing spinach, cheese, and butter.

Beat eggs. Combine bread crumbs, Italian seasoning, and paprika and mix well. Dip chicken in egg, then in bread crumbs, holding so envelopes don’t unfold. Let dry in refrigerator for 15 minutes then re-dip in egg and crumbs. (You can bake at this time or hold them in the refrigerator for several hours.) When ready to bake, melt the stick of butter and roll the chicken in the butter, turning to coat. Place in a shallow baking dish and pour any remaining butter over the chicken. Bake at 375° for 25–30 minutes, turning once. Make a small cut in the chicken to check for doneness. (no pink!)


Fun Fact: Did you know that spinach is healthy in different ways in both its cooked and raw form? When cooked, it makes the carotenoids, including beta-carotene, more available. When raw, the vitamin C and folate content is stronger.
