Breast of Chicken in Cream and Apples

Ingredients

8 chicken breasts
3 tablespoons flour
8 tablespoons butter
4 tablespoons minced onions
8 fresh apple rings, peeled and cut 1/2-inch thick
1 1/2 cups cider
1/2 cup brandy
2 cups whipping cream
salt and pepper to taste

Directions:

Dust chicken breasts with flour and sauté in butter with onion over low heat. Poach apple rings in cider until soft. When chicken is nicely browned, add the brandy and ignite. Drain the apple rings and add the cider used for poaching to the chicken. Cook at low heat until chicken is tender, about 10 minutes. Add cream and continue cooking until the sauce is thickened. Season to taste. Place chicken on a serving platter, put a slice of apple on each piece, and pour sauce over all. Run under the broiler to brown.
