Chicken Curry

Ingredients

1/2 pound raisins
1/2 cup flaked coconut
1/4 Spanish onion, cut into julienne strips
3 pounds chicken, cooked, skinned and cut into 1/2-inch cubes
1 green apple (Granny Smith if available), cut into 1/2-inch cubes
1 red apple, cut into 1/2-inch cubes
1 pear, cut into 1/2-inch cubes
4 stalks celery, bias cut
7 ounces pineapple chunks, drained
1 1/2 cups mayonnaise
1/4 cup honey
2 tablespoons curry powder

Directions:

Place raisins in hot water for 5 minutes to plump. drain well. Spread coconut on a cookie sheet and broil until golden brown. Deep-fry onion until golden brown. drain on paper towel.

Toss together raisins, coconut, and onion with all but last 3 ingredients. Combine mayonnaise, honey, and curry powder. Mix thoroughly with rest of ingredients. Refrigerate until chilled.
