Halibut à la Orange


Serves: 5

Ingredients

1 orange
zest from orange
1 cup orange juice
4 teaspoons cornstarch
3 green onions
1 teaspoon chicken bouillon
1 1/2 - 2 pounds halibut, thawed

Directions:

Zest orange, then peel, section, and chop. Place all ingredients, except fish, in dutch oven. Cook, stirring often, until thickened and bubbly. Remove from heat. Remove most of sauce and place fish in pot. Pour sauce over fish and bake at 350° for 15–25 minutes or until fish is flaky. (Use 10–12 coals under, 18–22 on lid if cooking outdoors.) Serve with sauce spooned on fish.


Fun Fact: The orange was the first fresh fruit to bear a trademark. In 1919 the California Fruit Growers exchange burned “Sunkist” on their oranges.
