Ice House’s Shrimp Scampi


Serves: 4

Ingredients

4 teaspoons butter
2 ounces oil (olive or peanut)
2 - 3 garlic cloves, sliced
1 pound medium shrimp, shelled
1/2 teaspoon lemon juice
1/2 medium onion, chopped
1 tomato, chopped
1/2 green bell pepper, chopped
1 teaspoon black pepper
1 teaspoon salt
1 tablespoon chopped fresh parsley
1/4 cup white wine

Directions:

In skillet, melt butter; add oil, and sauté garlic lightly. Add shrimp, cooking until it turns pink and begins to curl. Add lemon juice, onion, tomato, green bell pepper, black pepper, salt, parsley, and wine. Cook only a minute or so until tender. Remove shrimp and pour sauce from skillet over top.
