Chile Trout

Ingredients

1 onion, chopped
1 tablespoon oil
1 red bell pepper, roasted
2 dried Ancho chiles, soaked in water till soft
4 garlic cloves
1 bunch fresh cilantro
3 tablespoons fresh lime juice
1/4 teaspoon salt
6 whole trout, filleted
2 limes, cut into wedges

Directions:

Purée onion, oil, pepper, chiles, garlic, and cilantro in a food processor; add lime juice and salt. Rub paste over fish. Bake at 450° for 10–15 minutes, or until fish is flaky. Don’t overbake. Serve with lime wedges.

Note: This chile paste works well with catfish, or any other white fish and can also be made ahead of time and stored in the fridge or freezer.
