Feta Shrimp

Ingredients

2 large onions, thinly sliced
1/3 cup olive oil
4 large tomatoes, peeled and coarsely chopped
3 tablespoons finely chopped parsley
1/2 teaspoon dried dill weed
1/4 - 1/2 teaspoon freshly ground black pepper
1/4 teaspoon sugar
1 garlic clove, minced or mashed
2 pounds large raw shrimp, peeled and deveined
3/4 pound Greek feta cheese
1 large whole tomato, peeled (optional)
parsley or dill sprigs

Directions:

In an oven-proof skillet or dutch oven, sauté onions in oil until tender. Add chopped tomatoes, chopped parsley, dill, pepper, sugar, and garlic. Cover and simmer 30 minutes, stirring occasionally. Add shrimp, dipping them down into the sauce and arranging in a circle. Crumble feta cheese over shrimp. Place whole tomato in center, if desired. Bake, uncovered, in 450° oven for 10–15 minutes or until shrimp are done and cheese is melted. Garnish with parsley or fresh dill sprigs.
