White Cake

2 cups sifted cake flour
1 teaspoon kosher salt
1 1/2 cups sugar
1/2 cup polyunsaturated oil
1 cup non fat milk
3 teaspoons baking powder
4 egg whites
1 teaspoon vanilla extract


Sift together in a mixing bowl the flour, salt and sugar. Add the oil and 2/3 cup milk. Stir until the flour is damp and beat for 1 minute. Stir in the baking powder and then add the remaining milk, the egg whites and vanilla extract. Beat for two minutes.

Grease one 10-inch tube pan or two 8-inch round cake pans with non stick spray and dust with flour. Pour half the batter into each round pan or all of the batter into the tube pan. Bake at 350 degrees for 35 minutes or until a toothpick can be removed free of batter. Cool in the pan for 10 minutes and then turn out onto a wire rack to complete cooling. Dust with confectioner’s sugar or frost when completely cool.
