Whipped "Cream"

1/2 teaspoon unflavored gelatin
6 tablespoons non fat milk
1/2 cup ice water
1/2 cup non fat dry milk powder
3/4 teaspoon vanilla extract
1 1/4 tablespoons granulated sugar


Chill a bowl in the refrigerator.

Soften the gelatin in 1 tablespoon of non fat milk. Heat the remaining milk and add the softened gelatin, stirring until dissolved and set aside to thicken.

Pour the ice water into the chilled bowl, add 2 tablespoons of non fat dry fat milk powder and beat for one minute at high speed. Reduce the speed to low and add the remaining non fat dry milk powder. At medium speed, add the sugar and vanilla. Increase to high speed, add the gelatin mixture and beat for 10 minutes. Refrigerate for 3 hours before serving.
