Strawberry Mousse

Serves: 6

1 package frozen strawberries, thawed and juice reserved
1/2 cup non fat dry milk powder
1/2 cup chilled juice from strawberries
1 egg white, stiffly beaten
2 tablespoons freshly squeezed lemon juice
4 tablespoons sugar


Beat the milk powder and strawberry juice until soft peaks form. Add the lemon juice and continue to beat until the peaks are firm. Gradually stir in half the sugar.

In a separate bowl, mash the strawberries and mix with the rest of the sugar. Fold the whipped milk and mashed berries into the beaten egg white, pour into parfait glasses and freeze.
