Flourless Banana Cake

1 1/2 cups liquid egg substitute
1 cup sugar
3/4 cup cake meal
1/4 cup potato starch
juice and zest of 1 lemon
2 ripe bananas, mashed
1/4 cup polyunsaturated oil
1/2 cup walnuts, toasted and finely chopped


Mix the egg substitute and sugar and reserve.

Mix the cake meal and cornstarch and make a well in the middle. Add the oil, lemon juice, zest and bananas and fold in. Pour into a baking pan greased with non-stick spray. Bake for one hour at 325 degrees. Remove from the oven, invert the pan and cool on a wire rack.
