Apple Cake

1/3 cup polyunsaturated margarine
3/4 cup sugar
1/2 cup liquid egg substitute
1/2 teaspoon vanilla extract
1 1/3 cups unsifted flour
1/2 cup non fat milk
2 1/2 teaspoons baking powder
1/4 teaspoon household salt
1 teaspoon ground cinnamon
1/4 cup raisins
4 cups peeeld, sliced apples brushed with lemon juice
1/4 cup brown sugar


Blend the margarine and sugar until creamy. Beat in the egg and vanilla. Alternate adding the flour and the milk. Add the baking powder and salt. Fold in the raisins and pour the mixture into an 8 inch square pan greased with non-stick spray. Arrange the apples on top of the batter, sprinkle with cinnamon and brown sugar. Bake at 375 degrees for 1 hour and serve warm.
