Nannie Raue's Sweet Potato Pone

Ingredients

6 cups sweet potatoes , peeled and grated
1/2 cup all-purpose flour
1 teaspoon cinnamon
1 teaspoon nutmeg
1 1/3 cups sugar
1 cup evaporated milk , divided
1 egg , beaten
6 tablespoons butter , melted
1 teaspoon vanilla extract

Directions:

Combine sweet potatoes, flour, cinnamon, nutmeg and sugar in a large bowl. Add one cup evaporated milk; mix well. Stir in egg, blending well. Add butter and vanilla. Pour into a greased 13"x9" baking pan. Bake, uncovered, at 350 degrees for one hour and 30 minutes, stirring frequently. Add more milk if dry. Cut into squares; serve hot or cold.

Tip: Sprinkle crumbled gingersnap cookies over sweet potato casseroles for a sweet, crunchy topping.
