Sugar Cookies

1 3/4 cups margarine or butter
3/4 cup instant vanilla pudding mix*
1/2 cup sugar
2 eggs
2 teaspoons vanilla extract
4 cups GF Featherlight Mix
1 3/4 teaspoons xanthan gum
3/4 teaspoon baking powder
1/4 teaspoon salt


Cream margarine, pudding mix, and sugar. Add eggs one at a time, beating well after each. Add vanilla.

Combine dry ingredients and add to creamed mixture. Chill about 1 hour.

Preheat oven to 350°F.

Sprinkle a clean surface with Featherlight mix or potato starch. Place dough on the clean surface, turning once to dust both sides of dough with starch. Roll or pat out 1/4 inch thick. Cut with cookie cutters and place cookies 1 inch apart on ungreased cookie sheets.

Bake for about 11 minutes. The edges will start browning, but the tops will still be very light.

Frost with Cream Cheese Frosting and decorate as desired.

*Jell-O brand is gluten free right now (2006), but always read the labels in case their ingredients change.
