Carrot Cake

Ingredients

1 1/2 cups GF Featherlight Mix
1/2 cup GF Flour Mix
3/4 teaspoon xanthan gum
2 cups sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
3 cups finely shredded carrots (5 or 6 large carrots)
1 cup vegetable oil
4 eggs

1 recipe Cream Cheese Frosting

Directions:

Preheat oven to 350°F. Grease a 9 x 13-inch pan.

Combine dry ingredients. Add carrots, oil, and eggs. Beat on low until well combined. Pour into prepared pan.

Bake 35 to 40 minutes, until the edges of the cake start to pull away from the pan and a knife inserted in the center comes out clean. Remove from oven and cool.

Frost with Cream Cheese Frosting.
