Vegetarian Pizza Appetizer

Ingredients

1 (10-ounce) package refrigerated pizza crust
1 (8-ounce) package cream cheese softened
3/4 cup cottage cheese lowfat small curd
1/3 cup fat-free mayonnaise
1 (.4-ounce) package ranch salad dressing mix
2 1/2 cups finely chopped fresh vegetables (combination of green or red bell pepper, broccoli, cauliflower, and seeded tomato)
1/2 cup carrot grated
1/2 cup green onion thinly sliced
1/2 cup olives sliced ripe or green olives, drained
1 (4-ounce) package Cheddar cheese finely shredded or Monterey Jack cheese (about
Sliced cherry tomatoes (optional)

Directions:

Preheat oven to 425°. Lightly grease a 14 x 10-inch baking sheet or a 15 1/2 x 10 1/2 x 1-inch jelly roll pan.

Stretch pizza dough to cover baking sheet or jelly roll pan. Prick dough with a fork. Bake 8 to 10 minutes until golden brown and crisp. Cool baking sheet on a wire rack.

Cut cream cheese into chunks. Place in a blender container. Add cottage cheese, mayonnaise, and dressing mix. Cover and blend with on-off bursts until smooth. Spread over baked pizza crust. Sprinkle vegetables including carrot, green onions, and olives over the top, pressing lightly into the cream cheese mixture. Cover with foil and chill 4 to 24 hours.

Just before serving, uncover. Sprinkle shredded cheese over the top. With a sharp knife, cut into 2-inch squares. Transfer to a serving plate or tray. Garnish with cherry tomatoes if desired.
