Whole Wheat Pizza Crust
Make Basic Pizza Crust but use 1 3/4 cups whole wheat flour and 3/4 cup all-purpose flour mixed together in place of the 2 1/2 cups all-purpose flour. Increase water to 1 1/4 cups warm water (120° to 130°).

Cheese Pizza Crust
Make Basic Pizza Crust but decrease salt to 1/2 teaspoon. Stir 1/4 teaspoon pepper into flour-yeast mixture. Decrease shortening to 1 tablespoon solid vegetable shortening. After adding water, use only 1 1/4 cups all-purpose flour and stir in with 1/2 cup shredded Cheddar cheese.

Herb Pizza Crust
Make Basic Pizza Crust but decrease salt to 1 teaspoon. Stir 2 teaspoons dried Italian herb seasoning into flour-yeast mixture. Stir 1 clove garlic, minced, into warm water before stirring water into flour-yeast mixture.
