Stewed Rhubarb

Serves: 4

1 pound rhubarb
1/2 cup sugar
1 teaspoon lemon peel grated
1/4 cup water


Wash and trim rhubarb, peeling off tough skins. Cut into 1-inch pieces to make 3 cups. Combine with sugar, lemon rind, and water in medium saucepan. Cover and cook over medium heat for 5 minutes or until tender.
