Old-Fashioned Rice Pudding

Ingredients

4 cups milk scalded
1/3 cup long grain rice uncooked
1/3 cup sugar
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/2 teaspoon vanilla extract
1/2 cup raisins (optional)

Directions:

Combine all ingredients but vanilla and raisins (cinnamon may be substituted for nutmeg) in buttered 1 1/2-quart casserole. Bake at 325 degrees F. for 1 1/2 hours, stirring each half hour. Stir in vanilla and raisins. Bake, without stirring, for another half hour, or until rice is tender and milk is absorbed.
Note: Converted rice may be used, but not quick-cooking rice.
