Peach Cobbler

Ingredients

2 tablespoons butter
3 cups sliced peaches
1/2 cup sugar
2 tablespoons flour
1/2 teaspoon cinnamon
1 cup flour, stirred and measured
2 tablespoons sugar
1/4 teaspoon salt
1 1/2 teaspoons baking powder
1/3 cup vegetable oil
3 tablespoons milk
1 egg slightly beaten

Directions:

Preheat oven to 350 degrees F. As oven is heating, melt butter (or margarine) in 11 1/2x7 1/2-inch baking pan. Arrange sliced peaches (1 can [29 ounces] peach slices, drained may be substituted for fresh) evenly in prepared pan. Stir together 1/2 cup sugar, 2 tablespoons flour and cinnamon sprinkle evenly over fruit set aside. Blend together 1 cup flour, 2 tablespoons sugar, salt, and baking powder in medium mixing bowl stir in remaining ingredients that have been mixed together just until blended. Spoon evenly over fruit. Bake at 350 degrees F. for 25 to 30 minutes or until done.
Note: Other fruits such as cherries, plums, pears, or apples (fresh, canned, or frozen) may be used in place of peaches. For fresh fruit that is somewhat tart, you may want to increase 1/2 cup sugar to 2/3 cup.
