Orange Sherbet

1 (6-ounce) can orange juice concentrate
1 tablespoon gelatin unflavored
3/4 cup sugar granulated
1/8 teaspoon salt
1/4 cup lemon juice
1 teaspoon lemon peel grated
1 cup half and half


Reconstitute orange juice with water by label directions. Soak unflavored gelatin in 1/2 cup of juice in small bowl for 5 minutes. Set bowl over boiling water heat and stir until gelatin is dissolved. Combine with remaining orange juice, sugar, salt, lemon juice, lemon rind, and cream. Turn into freezing tray freeze until half frozen. In chilled bowl beat frozen mixture unto fluffy. Return to freezing tray and freeze until firm.
