1/4 teaspoon cream of tartar
1/8 teaspoon salt
1 cup sugar

Gradually add sugar, beating until very stiff peaks form and sugar is dissolved. Cover baking sheet with plain ungreased paper. Using a 9-inch round cake pan as guide, draw a circle on paper. Spread meringue over circle shape into shell with back of spoon, making bottom 1/2 inch thick and mounding around edge to make sides 1 3/4 inches high. Bake at 275 degrees F. for 1 hour. Turn off heat and allow to dry in unopened oven for at least 2 hours. Cool. Fill with fresh fruit and garnish with slightly sweetened whipped cream.
Note: Individual meringues may be made by shaping 1/3 cup meringue mixture into individual 3 1/2-inch circles. Bake as above, allowing 1 hour for shells to dry in closed oven. Makes 8 shells.
