2/3 cup honey
3 tablespoons lemon juice fresh
1 1/2 tablespoons ginger finely minced candied
1 teaspoon orange rinds grated
4 oranges peeled and cut in segments
2 cups blueberries fresh or frozen
3 cups cantaloupes cubed
2 cups strawberries halved, washed and hulled
3 bananas whole, peeled and sliced diagonally
Whole strawberries for decoration
Fresh mint leaves for decoration
Combine honey, lemon juice, candied ginger, and orange rind. Pour mixture over orange segments in a bowl; cover and refrigerate for several hours or overnight. Prepare and chill the remaining fruits, with the exception of the bananas. Drain oranges; pour reserved marinade over prepared bananas just before assembling. Drain and reserve marinade. Arrange orange segments in bottom of compote; add a layer of blueberries, followed by bananas, melon, and halved strawberries. Pour reserved marinade over fruit. Garnish with additional whole strawberries and fresh mint leaves.
