Layered Fruit Compote

Ingredients

2/3 cup honey
3 tablespoons lemon juice fresh
1 1/2 tablespoons ginger finely minced candied
1 teaspoon orange rind grated
4 oranges peeled and cut in segments
2 cups blueberries fresh or frozen
3 cups cantaloupes cubed
2 cups strawberries halved, washed and hulled
3 bananas whole, peeled and sliced diagonally
Whole strawberries for decoration
Fresh mint leaves for decoration

Directions:

Combine honey, lemon juice, candied ginger, and orange rind. Pour mixture over orange segments in a bowl cover and refrigerate for several hours or overnight. Prepare and chill the remaining fruits, with the exception of the bananas. Drain oranges pour reserved marinade over prepared bananas just before assembling. Drain and reserve marinade. Arrange orange segments in bottom of compote add a layer of blueberries, followed by bananas, melon, and halved strawberries. Pour reserved marinade over fruit. Garnish with additional whole strawberries and fresh mint leaves.
