Lacy Bread Crumb Pancakes

Serves: 4

   ___ cup bread crumbs soft
   _ tablespoons margarine
   _ 1/2 cups milk scalded
   _ eggs well-beaten
   ___ cup flour
   _ teaspoon baking powder
   _ teaspoons sugar
   Dash salt


Sauté bread crumbs in margarine until golden; add to scalded milk. Let stand until crumbs are soft and milk has cooled. Add eggs, stirring well. Sift dry ingredients together; add to milk mixture, stirring until well-blended. Allow to stand for 15 minutes before baking for ease in handling. Bake on a hot griddle, using about 3 tablespoons batter and 1/2 teaspoon margarine for frying each pancake. Cakes will be very thin and lacy, so turn carefully.

Note: If you do not want your pancakes to be lacy, use a teflon skillet to cook pancakes omitting the margarine for frying.
