Egg Bread

Ingredients

1 package yeast active dry
2 teaspoons sugar
3/4 cup water warm (105° to 115° F)
3 cups flour
3 tablespoons wheat germ
3/4 teaspoon salt
3/4 cup dry milk powder
2 eggs
2 tablespoons vegetable oil
1 egg yolk beaten
2 tablespoons poppy seeds (optional)

Directions:

Combine yeast, sugar, and 1/4 cup warm water let stand 5 minutes. In a mixing bowl, blend 3 cups flour, wheat germ, salt, and dry milk. Make a well in the center and in it place 2 eggs, oil, remaining water, and yeast mixture mix well. Transfer to a floured surface and knead until smooth and elastic. Put into a greased bowl let rise 1 hour. Punch down dough and let rise again until double in bulk. Divide dough into 3 equal parts let rest 5 minutes. Form into 3 strips of even length place on a well-greased cookie sheet. Braid together by starting at the center and braiding to each end. Cover and let rise until double in bulk. Brush with beaten egg yolk and sprinkle with optional poppy seed. Bake in a preheated 375° F oven for 50 minutes or until golden brown.
