Hacienda Skillet Dish

Serves: 4



Sauté 1 medium chopped onion and 1/2 chopped green pepper in a small amount of oil. Add 1 pound ground beef and cook until brown. Add 1-pound can of tomatoes, one can of water (the tomato can), and 1 small can of whole kernel corn, drained. Add 2 cups uncooked noodles, 1 tablespoon chili powder, 1 1/2 teaspoons salt, and 1 medium size can of mushrooms (optional). Cover and cook over medium heat about 15 to 20 minutes or until noodles are done.

Serve on a hot buttered platter and top with Parmesan cheese. This recipe serves 4 hearty eaters. Naturally, it is easy to double this recipe making enough for 8.
