Fløtelapper (Norwegian Pancakes)

3 eggs
1 1/2 cups milk
1/2 cup half and half
1/2 cup butter real, melted
1 cup flour
1 tablespoon sugar
1/4 teaspoon salt


In blender, beat eggs until light and fluffy. Add milk, half-and-half, and butter blend well. Add dry ingredients blend until smooth. (Batter may now be refrigerated, covered, for several hours or overnight.) Cook on hot skillet, using approximately 2 tablespoons batter per pancake. When done, fold into quarters and serve hot with butter and jelly or sugar.
