Cranberry-Orange-Nut Bread

4 cups flour
1 1/2 cups sugar
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups cranberries cleaned and halved
1 cup nuts chopped
2 teaspoons orange rinds grated
1 1/2 cups orange juice concentrate
1/2 cup vegetable oil
2 eggs beaten


Preheat oven to 375° F. Lightly grease and flour three 7 1/2 x 3 3/4 x 2 1/4 -inch loaf pans. Into a large bowl sift together flour, sugar, baking powder, baking soda and salt. Stir in cranberries, nuts and orange rind.

In a small bowl combine juice, oil and eggs. Pour into flour mixture gently combine. Pour into pans and bake for 45 to 55 minutes or until done Remove from pans cool on wire racks.
