Baked Custard

3 eggs slightly beaten
1/4 cup sugar
1/4 teaspoon salt
2 cups milk scalded
1/2 teaspoon vanilla extract
1/8 teaspoon nutmeg


Combine eggs, sugar, and salt slowly add milk and vanilla. Pour into 1 quart casserole sprinkle with nutmeg. Set casserole into pan of hot water so water comes up 1 1/2 inches on side of casserole. Bake at 325 degrees F. for 45 to 50 minutes or until a silver knife blade, inserted into custard, comes out clean. Serve warm or cold.
