Butter Pecan Turtle Cookies

2 cups all-purpose flour
1 cup firmly packed brown sugar
1/2 cup butter, softened
1 cup whole or chopped pecans
2/3 cup butter
1/2 cup firmly packed brown sugar
1 cup chocolate chips


Preheat oven to 350°. In a 3-quart bowl, combine flour, 1 cup brown sugar, and 1/2 cup softened butter. Mix at medium speed, scraping sides of bowl often for 2–3 minutes or until well-mixed and particles are fine. Pat firmly into an ungreased 9x13x2-inch pan. Sprinkle pecans evenly over unbaked crust and press in lightly.

In a heavy 1-quart saucepan, combine 2/3 cup butter and 1/2 cup brown sugar. Cook over medium heat, stirring constantly, until entire surface of mixture begins to boil. Boil 1 minute, stirring constantly.

Pour caramel mixture over pecans and crust. Bake near the center of the oven for 18–22 minutes, or until entire caramel layer is bubbly and crust is light golden brown. Remove from oven, and immediately sprinkle with chocolate chips. Allow chips to melt slightly (1–2 minutes), then swirl chips as they melt. Leave some whole for a marbled effect, and do not spread. Cool completely, and cut into desired size.

Fun Fact: Hiram King “Hank” Williams was born in 1923, in the small town of Mount Olive, about eight miles southwest of Georgiana, Alabama. Williams had eleven number-one hits in his short career, as well as many other Top 10 hits. He has become an icon of country music and one of the most influential musicians and songwriters of the 20th century. A leading pioneer of the honky tonk style, his songbook is one of the backbones of country music, and several of his songs are pop standards as well. His songs have been covered in a range of pop, gospel, blues, and rock styles. Williams’ death at the age of twentynine helped fuel his legend. His son (Randall) Hank Williams, Jr., nicknamed “Bocephus,” his daughter Jett Williams, and his grandchildren (Shelton) Hank Williams III, Holly Williams, and Hilary Williams are also professional singers. The Official Hank Williams Museum is in Montgomery, where Hank lived from 1937–1953. The Hank Williams, Sr. Boyhood Home & Museum in Georgianna houses a large collection of Hank Williams, Sr. memorabilia, including recordings, posters, and sheet music.
