Taco Lasagna

Ingredients

2 pounds ground beef chuck
2 (1 1/4-ounce) packets taco seasoning mix
2 (15-ounce) containers ricotta cheese
4 egg whites, beaten
24 lasagna noodles, cooked
2 (16-ounce) packages finely shredded Colby cheese
2 (24-ounce) jars salsa

Directions:

Brown ground beef in a large skillet; drain. Stir in taco seasoning mix, adding a small amount of water if a thinner sauce is desired. Remove from heat and set aside. In a medium bowl, combine ricotta cheese and egg whites until well blended. Lightly spray two, 13"x9" baking pans with non-stick vegetable spray. In each baking pan, layer 4 lasagna noodles, 3/4 cup ricotta cheese mixture, half of ground beef mixture and 1-1/3 cups shredded cheese. Next, layer each casserole with 4 lasagna noodles, 3/4 cup ricotta cheese mixture, remaining beef mixture, 1-1/2 cups salsa and 1-1/3 cups shredded cheese. Cover one casserole with plastic wrap and freeze for up to 3 months. Bake remaining casserole at 350 degrees for about 40 minutes, or until hot and bubbly. Let stand for 10 minutes before serving. Makes 2 casseroles, each casserole makes 8 servings.


A pillar candle surrounded by a ring of candy canes will add a cheerful look to any room. Keep the candy canes in place with a rubber band hidden by a ribbon tied in a bow.
