Easy Chicken Divan

Ingredients

1 (10 3/4-ounce) can cream of chicken soup
1/2 cup mayonnaise
1/2 teaspoon lemon juice
1/2 teaspoon curry powder
4 to 6 boneless, skinless chicken breasts, cooked
1 (10-ounce) package frozen broccoli spears, thawed
1/4 cup bread crumbs
1/2 cup butter, melted
1 (8-ounce) package shredded Cheddar cheese

Directions:

In a medium bowl, blend together soup, mayonnaise, lemon juice and curry. Arrange chicken and broccoli in a greased 13"x9" baking pan; cover with soup mixture. Toss bread crumbs with melted butter; spoon over top of casserole. Sprinkle with cheese. Bake, covered, at 350 degrees for 20 minutes. Uncover and bake for an additional 10 minutes.


Garlicky orzo is a tasty side for any main dish. Sauté 2 cloves chopped garlic in 2 tablespoons butter until garlic is golden. Remove from heat and stir in one tablespoon lemon juice, one cup cooked orzo and 2 tablespoons chopped parsley.
