Stuffed Pepper Casserole

Ingredients

1 pound ground beef
1 red bell pepper, diced
1 green pepper, diced
1 zucchini, diced
1 onion, diced
1 clove garlic, minced
1/2 teaspoon cinnamon
1/2 teaspoon ground cumin
salt and pepper to taste
1 tablespoon cider vinegar
1 tablespoon sugar
1 (26-ounce) jar pasta sauce
1 cup shredded Cheddar cheese
1 cup shredded mozzarella cheese
1 (8-ounce) package medium egg noodle, cooked
Garnish: fresh parsley

Directions:

Brown beef in a large skillet over medium-high heat. Add peppers, zucchini and onion and cook until tender. Stir in garlic, cinnamon, cumin, salt and pepper; cook one minute longer. Remove from heat. In a bowl, stir together vinegar and sugar; mix in pasta sauce. Add to beef mixture; stir in noodles. Place in a lightly greased 13"x9" baking pan; top with cheeses. Bake, uncovered, at 375 degrees for 20 minutes, or until heated through. Garnish with parsley before serving.


Dip bread sticks in melted dark chocolate, then roll in crushed nuts for a sweet after-dinner treat.
