In the 1970s, Peggy Rasmussen would send home-baked cookies to her GI brother stationed overseas. "We shoot them out of the guns," he told her, "and they don't pulverize." Twenty years later, Peggy's recipes draw record response whenever she demonstrates her baking on a Minneapolis TV station.
When she bought a small cafe in Hamel, Minnesota, twenty years ago, Peggy thought she knew how to cook. But she quickly found out that she still had a lot to learn. She depended on her Betty Crocker cookbook for good basic instructions on how to prepare everything from meat loaf to apple pie. One of the secrets that a baker shared with her was that vintage Betty Crocker cookbooks had the best "from scratch" directions.
She always enjoyed cooking for the receptive customers in Hamel and still does. Baking was pretty tense during those learning years, but much to her surprise, she grew to love it. Her customers have become her friends, and she has had the privilege of sharing their joys and sorrow and laughs.
Peggy has had the opportunity to be involved with the local schools in a unique learning project that brings local sixth graders into the cafe to learn about small business and how to run a restaurant. They actually lease the Countryside Cafe for several nights each year and do all the jobs. The kids donate their profits to the local food shelves.
Her latest endeavor, a project called Kids Cafe, feeds 100 hungry kids a supper meal. She helped start the first "Cafe" in the Phillips neighborhood of Minneapolis and is now working with a group in St. Louis Park to start a site there
She says you have to be resourceful if you want to be involved in the community and run a restaurant.
