Nearly all the cake, muffin, pancake and all-purpose baking mixes we use today are descended from Bisquick. Introduced in the early 1930s, this convenience product was an instant hit with consumers. But how did it happen? Carl Smith, a General Mills executive, boarded a train late one night in 1930. He hungrily headed for the dining car, expecting that only cold food would be available at that hour. To his surprise and delight, a piping-hot meal was served, including freshly baked biscuits! The delicious hot biscuits piqued his curiosity, and he pleaded with the chef to reveal his secret: a mix of lard, flour, baking powder and salt kept ready for use in the refrigerator. Smith brought the idea back to General Mills, where food scientists figured out how to keep the ingredients fresh in a box. Within the first seven months on the market, five hundred thousand cases of the mix were sold! Within a year, there were ninety-five competing mixes from which consumers could choose.
