Szechuan Chicken and Pasta

Ingredients

1 pound boneless skinless chicken breast half, cut into 3/4 to 1-inch pieces
1 medium onion, cut into thin wedges
2 cups water
1 1/2 cups uncooked fusilli pasta (3 ounces)
1 (21-ounce) bag szechuan stir fry mix with vegetables, Szechuan sauce and peanuts

Directions:

Spray 12-inch nonstick skillet with cooking spray heat over medium-high heat. Add chicken and onion stir-fry 3 to 5 minutes or until chicken is light brown.
Stir in water heat to boiling. Stir in pasta. Cook 8 to 10 minutes, stirring occasionally, until pasta is almost tender (do not drain).
Stir in packet of sauce mix from stir-fry mix until well blended. Stir in vegetables. Reduce heat to medium. Cover and cook 8 to 9 minutes, stirring occasionally, until vegetables are crisp-tender. Sprinkle with peanuts from stir-fry mix.

For an additional time-saver, look for thinly presliced chicken breast strips in the meat aisle (the package may be labeled "chicken for stir-fry"). You'll need about 1 pound of strips for this recipe.
