Spinach Cheese Balls

Ingredients

2 (10-ounce) packages frozen chopped spinach
1 tablespoon dried minced onion
2 cups herb- seasoned stuffing mix
1 cup grated Parmesan cheese
2 eggs, beaten
3 tablespoons melted butter

Directions:

In a saucepan, cook spinach according to package directions. Drain and add dried onion. In mixing bowl, combine spinach mixture, stuffing, and cheese. Stir in eggs and melted butter. Let stand for 15 minutes. Shape into 1-inch balls. Place in a shallow ovenproof pan. Bake at 375° for 10–15 minutes or until heated through.

Note: This can also be spread in a 9-inch pie pan and cut into wedges as a luncheon dish.
