Glazed Bacon

Ingredients

1/2 pound bacon, sliced
1/2 cup light brown sugar, packed
1 tablespoon Dijon style mustard
2 tablespoons red or white wine

Directions:

Put the bacon in a large cake pan and bake in a preheated 350° oven for 10 minutes. Drain off the fat. At this point, before you add the glaze, the bacon should be almost crisp—be sure not to underbake it.

In a small bowl, mix the sugar, mustard, and wine until smooth. Pour half of this glaze over the bacon and return to the oven. Bake at 350° for 10 minutes. Turn the bacon; cover with the remaining glaze and continue to bake until golden brown. Remove and place on wax paper. Serve warm or cooled.
