Ingredients

2 pounds potatoes, peeled and diced into 1/4-inch cubes
1 cup butter
3/4 cup diced onion
2 tablespoons Home Fries Seasoning Mix
butter, for serving (optional)

Home Fries Seasoning Mix:
1 cup salt
1/2 cup paprika
1/4 cup ground black pepper
1/4 cup ground white pepper
1/2 cup onion powder
1/2 cup garlic salt

Directions:

Cook the potatoes in a vegetable steamer over simmering water for 20–30 minutes, until just tender.

Melt the butter in a heavy skillet, and add the onions and 1 tablespoon of the seasoning mix. Sauté over medium heat until the onions are limp and translucent, about 10 minutes. Do not let them brown. Add the potatoes, and sprinkle with the remaining 1 tablespoon seasoning mix. Sauté over medium heat until golden brown and crisp, about 15 minutes. Dot with more butter for added flavor.

For Home Fries Seasoning Mix:
Combine all the ingredients in a large jar or other covered container. Shake to mix well. This will last up to 6 months.

Fun Fact: Since 1773, the Red Lion Inn has been welcoming travelers to the beauty of the Berkshires with traditional New England hospitality. The inn has hosted five presidents and numerous other notable figures, including Nathaniel Hawthorne, William Cullen Bryant, and Henry Wadsworth Longfellow. An outstanding collection of early American furnishings and china adorn the guest rooms and common areas. Located at the center of the historic village of Stockbridge, Massachusetts, the inn was immortalized in Norman Rockwell’s painting, “Stockbridge Main Street at Christmas.” The inn epitomizes New England charm.
