Block Island Potatoes

Ingredients

3 pounds small new or red potatoes
6 tablespoons unsalted butter
3 tablespoons olive oil
3 large garlic cloves, crushed (I prefer to mince)
1 tablespoon crushed fresh thyme, or 1/2 teaspoon dried
1 1/2 teaspoons crushed fresh or dried rosemary
1 1/2 teaspoons paprika
dash of cayenne pepper
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1/2 cup chopped fresh parsley

Directions:

Preheat oven to 375°. Scrub and dry potatoes. Melt butter in oil over moderate heat in roasting pan or casserole. Add the next 8 ingredients. Stir to mix. Add potatoes and roll them in butter mix to coat well. Bake, basting potatoes occasionally, for about 40 minutes or until tender.
