Chinese Barbecued Spareribs

2 pounds lean pork spare ribs, cut into 2-inch lengths
1/2 cup water
1/3 cup soy sauce
1/3 cup light brown sugar
2 tablespoons cider vinegar
1/4 teaspoon freshly grated ginger root
1 - 2 clove garlic, very finely minced
1 tablespoon cornstarch
2 tablespoons water


Place the lightly salted ribs in a roasting pan with the 1/2 cup of water. Cover and bake at 350° for 1 1/4 hours. Drain off all water and grease, cool slightly, and cut into individual ribs. Can do this several days ahead.

Combine the soy sauce, sugar, vinegar, ginger, and garlic in a saucepan and bring to a boil stirring constantly. Boil 1 minute. Combine cornstarch and water well and add to the sauce. Cook over medium heat stirring constantly until sauce is thick and clear. Cool slightly and then pour over ribs to coat completely. Place coated ribs in a flat baking dish and bake for 20 minutes at 350°.
