Zuppa Tortellini (Tortellini Soup)

Ingredients

1 smoked ham hocks, split
4 cans chicken broth
1 quart water
2 tablespoons margarine
1 large onion, sliced
2 ribs celery, sliced
1 green pepper, diced
3 carrots, peeled and diced
1 clove garlic, minced
1 box fresh mushrooms, sliced
1 (28-ounce) can tomato
1 pound hot Italian sausage
1 package fresh tortellini noodle (from deli section)
1 zucchini, sliced
Parmesan cheese
parsley

Directions:

Simmer ham hock in chicken broth and water until meat begins to fall off the bone. Remove, discarding fat and bone. Dice meat. In margarine, sauté onion, celery, green pepper, carrots, and garlic until onion begins to turn golden. Add vegetables to pot. Sauté mushrooms in remainder of margarine. Add to pot. Add tomatoes and simmer 3/4 hour. Skim off fat. In the meantime, cook Italian sausage and slice when warm enough to handle. Add to pot. Ten minutes before serving, add tortellini. Five minutes before serving, add zucchini. Garnish with Parmesan cheese mixed with parsley.
